My Sister’s Seven Layer Dip

2 avocados – peeled, pitted and diced

¼ cup chopped fresh cilantro

¼ cup salsa

1 ½ tablespoons fresh lime juice

¼ teaspoon garlic salt

ground black pepper to taste

1 (8 ounce) container sour cream

1 (1 ounce) package taco seasoning mix

1 (16 ounce) can refried beans

4 roma (plum) tomatoes, diced

1 bunch green onions, finely chopped

2 cups shredded Mexican-style cheese blend

1 (2.25 ounce) can black olives – drained and finely chopped

Spicy Buffalo Chicken Tenders and Blue Cheese Dipping Sauce

Serves 2 (232 calories per portion roughly)

2 large chicken breasts cute into about 8 strips each

Aromat seasoning to taste (about a tsp)

Peri peri seasoning (optional) (about a tsp)

Salt & Pepper

Handful of white breadcrumbs (about 150g/ 1 cup)

Olive oil or sunflower oil spray

Parsley (for garnish, optional)

Buffalo sauce (92 calories per serving)

160ml (2/3 cup) Franks hot sauce

1 tsp Worcester sauce

1 tbsp white vinegar

25g (1/4 cup) butter

Blue Cheese dip (123 calories per serving)

125g (1 cup) fat free greek yoghurt

1 heaped tsp full fat mayo

50g (1/2 cup) blue cheese crumbled small (I personally like to just Cashel Blue or Gorgonzola, but you can use any blue cheese you like)

1 Tsp white vinegar

Squeeze of half a lemon (about a tsp)

½ clove garlic crushed / chopped fine

Salt & pepper, to taste

Mom’s Famous Buffalo Wings

10 small (13 ounces total) chicken wing flats (wingettes), patted dry

1/2 cup Buffalo-style hot sauce (such as Frank’s RedHot)

3 tablespoons unsalted butter

Grandma’s Cookie Dough Dip

1 (8-ounce) package cream cheese, softened
1/2 cup butter, softened
1 cup confectioner’s sugar
2 tablespoons brown sugar
1 1/2 teaspoons vanilla extract
1 cup chocolate chips
1 cup toffee bits

Mom’s Famous Mac and Cheese Bites

227 g elbow macaroni
30 g bacon grease or unsalted butter see notes
16 g all-purpose flour
270 ml milk
1 teaspoon fine sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
⅛ teaspoon ground cayenne pepper
⅛ teaspoon ground nutmeg
227 g sharp cheddar cheese shredded
227 g Monterey Jack cheese shredded

For the Breading:
125 g all-purpose flour
